Eggs Benedict Casserole











Ingredients Needed...


cooking spray

8 large eggs
2 cups milk
3 green onions, chopped
1 teaspoon onion powder
1 teaspoon salt
3/4 pound Canadian bacon, cut into 1/2-inch dice
6 English muffins, cut into 1/2-inch dice
1/2 teaspoon paprika
1 (.9 ounce) package hollandaise sauce mix
1 cup milk
1/4 cup butter
8 oz bag grated cheese (your choice)

Spray 9x13-inch baking dish with cooking spray.

Whisk eggs, 2 cups milk, green onions, onion powder, and salt together in a large bowl until well mixed.

Layer half the Canadian bacon in the prepared baking dish. Spread English muffins over meat and top with remaining Canadian bacon.

Pour egg mixture over casserole. Cover baking dish with plastic wrap and refrigerate overnight.

Preheat the oven to 375 degrees F (190 degrees C).

Sprinkle casserole with paprika; cover with aluminum foil.
Bake in preheated oven until eggs are nearly set, about 30 minutes; remove foil. Continue baking until eggs are completely set, about 15 more minutes.

Whisk hollandaise sauce mix with 1-cup milk in a saucepan. Add butter and bring to a boil, stirring frequently. Reduce heat to medium-low, simmer, and stir until thickened, about 1 minute. Drizzle sauce over casserole. Top with grated cheese. Serve immediately.

Walking Fitness

Walking is a great source of exercise.

Did you know, that while walking having good form is also very important?
It will help you get the most out of your everyday exercise by walking when using, good form and proper technique:


1. Stretch first.
2. Keep your chin up.
3. Keep shoulders back.
4. Stand up as tall as possible.
5. Keep your abdomen flat.
6. Point your toes forward.
7. Take long strides.
8. Put your heels down first.
9. Swing arms naturally and pump as you go.
10. Keep you posture straight as you walk up or down hill. If you lean forward or backward, you can strain and/or hurt your back.

Flowers - and not just a single bouquet. Go all out this year and purchase a bouquet of flowers for every room of her home or apartment. There is nothing like the cheerful color and aroma of fresh-cut flowers to brighten her day. A woman dreams of this happening in her life just once…make that dream come true for her this year.

Spa Experience - Most people who have never been to a spa believe they might not enjoy or appreciate the experience. Surprise Mom with a gift certificate to a spa, offer to deliver her to the front door and pick her up when she is done. Better yet, offer to join her and make it a day to remember for both of you.

Beauty and Nail Salon Experiences – Surprise Mom with a gift certificate for a hair color and cut. Perhaps another one for a mani/pedi. Again, go with her. Every woman appreciates radiant looking skin that results from using good anti-aging beauty products. Moisturizing foot and hand scrubs in her favorite fragrance are sure to please.

WAYS TO BE HAPPY

Happy people don't sit around waiting for good things to happen to them, they make good things happen. They look for something meaningful, whether it's learning a new language, retraining in their careers or raising good kids. Find a happy person, and you will find a project in the making. Here are a few ways to being a happier person:

1. Practice kindness. Do something nice for someone else, whether it's someone you know or a stranger. It can be spur of the moment or planned out.

2. Keep a gratitude journal. People who kept a weekly gratitude journal actually did more exercise, had fewer physical problems, and felt more optimistic about life in general.

3. Buy experiences, not stuff. A vacation with loved ones or buying tickets to a show or concert will make you happier than buying another “thing.”

4. Buy things that create experiences. If you want to buy something, then buy something that allows you to have experiences that interest you. Thing such as sports and music will allow you an opportunity to engage with people you care about

5. Cut back on social media. People who spend more time on Facebook and other social media report lower self-esteem, less connection to others and fewer positive emotions.

6. Stop checking your email. People who check their email all the time are more stressed than people who check their email just a few times a day.

7. Focus on time, not money. Focusing on time often helps people realize that time is a precious resource. When focusing on time, you tend to be more stressed.

8. Lose yourself in your activities. Enjoy what is going on at the moment.

9. Embrace failure. Failing is way to learn what doesn't work before you can learn what does work. People who succeed many times fail before they succeed.

Financial commitment has nothing to do with whether you are smart or wealthy; it has more to do with being financially literate. Even smart and wealthy people make poor monetary decisions. If you are like many Americans, you spend more than you save. To reverse that behavior, you need to be disciplined and do some planning. Here are some steps to put you in the direction of savings.

1. Question your needs and wants. What do you want? What do you really need? Start evaluating your financial situation with those questions in mind.

2. Set Guidelines. Figure out your parameters and stick within those guidelines.

3. Track your spending. Once you start tracking, you may be surprised to find you spend so much money in a specific area that you hadn’t even considered. Some of these expenses are easy to cut back. However, be realistic when tightening your belt.

4. Helping others. Do not give of yourself financially if it erodes your financial security. For example, don’t be afraid to say no to co-signing a loan if it will hurt your financial security.

5. Understand the importance of delayed satisfaction. Don’t spend all your money today. You need to invest today’s dollar for tomorrow’s goal. That can come in the form of a home, retirement or save for a vacation that you can pay for with cash.
